Ingredients
For the cake:
1 cup semolina

1 cup sugar
1/2 cup Greek yogurt
1/2 cup vegetable oil
3 eggs
Zest of 2 oranges
1 teaspoon baking powder
1 teaspoon vanilla extract
For the syrup:
1 cup water
1 cup sugar
Juice of 1 orange
1 cinnamon stick (optional)
Instructions
1. Prepare the syrup:
In a saucepan, mix the water, sugar, orange juice, and cinnamon stick (if you’re using it).
Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes until it thickens slightly.
Set it aside to cool.
2. Preheat the oven:
Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper.
3. Mix the batter:
In a large bowl, whisk the eggs and sugar together until they become pale and fluffy.
Add in the yogurt, oil, orange zest, and vanilla extract, mixing everything well.
Gradually fold in the semolina, flour, and baking powder until you have a smooth batter.
4. Bake the cake:
Pour the batter into the prepared dish and spread it out evenly.
Bake for 30-35 minutes or until it turns golden brown and a toothpick inserted into the center comes out clean.
5. Add the syrup:
Once the cake is out of the oven, let it cool for about 5 minutes.
Slowly pour the cooled syrup over the warm cake, allowing it to soak in completely.
6. Serve and enjoy:
Cut the cake into diamond or square shapes.
